Dissertatsiyada shaftoli mevalarini ahamiyati, tarkibi, shaftoli mevalaridan foydalanish usullari, shaftoli mevalaridan sharbat tayyorlash texnologiyasi, sharbatga qo’yiladigan talablar batafsil yoritilgan.
Shaftolining yetukligiga ko’ra to’g’ri yig’ishtirib olish, yig’ib olingan shaftolilarni ishlatilishiga ko’ra saralash va shaftoli saqlash usullari bayon etilgan.
Shaftoli mevalaridan qayta ishlash jaroyoni; jem, murabbo, pavitlo, etli sharbat tayyorlash kabi texnalogik jarayonlar keltirilgan. Shaftoli mevasini qayta ishlashga mos tur va navlarini tahlil qilingan.
Shaftoli mevasini turli usullarda qayta ishlash texnologiyasini o’rganish, shaftoli mevasini turli xil tayyorlangan sharbatlar va ularning sifat darajasini aniqlash kabi jarayonlar o’rganilgan.

The importance of peach fruits, their composition, methods of using peach fruits, the technology of making juice from peach fruits, and the requirements for juice are explained in detail in the dissertation.
Proper harvesting of peaches according to maturity, sorting of harvested peaches according to their use, and peach storage methods are described.
Processing of peach fruits; technological processes such as preparation of jam, jelly, thick juice are presented. Analysis of types and varieties suitable for peach fruit processing.
Processes such as studying the technology of peach fruit processing in different ways, various peach fruit juices and determining their quality have been studied.
